Pique Criollo: Puerto Rican Hot Sauce

Instructions
Whisk lime juice, apple cider vinegar, white vinegar, salt, and sugar in a bowl until dissolved.
Blend the hot peppers in a food processor or smash them in a mortar.
In an empty bottle, add the thyme, culantro, cilantro, bay leaf, oregano, ají dulce peppers, black peppercorns, garlic, and blended hot peppers.
Use a funnel to pour in the liquid mixture, filling to the middle of the bottle neck.
Top with oil, seal, and shake.
Let ferment near a window for one week, then enjoy.
