Candied Green Papaya with Cheese

Instructions
Peel and seed the papaya (4 lb), then cut it into strips or chunks.
In a large bowl, mix the water (8 cups) with baking soda (1 tsp) and soak the papaya for 15–20 minutes to help it stay firm when cooked.
Drain and rinse well with cold water.
In a large pot, combine the papaya, sugar (4 cups), cinnamon sticks (2–3), cloves (2–3) (if using), and salt (1 pinch). Add about 6–7 cups of water to cover the fruit and bring to a boil over medium-high heat.
Reduce to medium-low, cover, and simmer for 45–60 minutes, stirring occasionally.
In the final 5 minutes, add vanilla (½ tsp) if using and stir. The papaya should be tender and the syrup thick.
Let cool to room temperature, then refrigerate for at least 2 hours to deepen the flavor.
Serve chilled with pieces of country-style white cheese or a generous spoonful of ricotta.
